Matcha Tiramisu

Ingredients for 1 servings:

  • 50 g butter
  • 2 packets of vanilla sugar
  • 4 eggs
  • 80 g nuts, ground, e.g. cashew nuts
  • ½ pack of baking powder
  • 80 g chocolate shavings
  • 1 cup whipped cream
  • 1 cup mascarpone
  • 1 cup cream cheese
  • 4 tbsp, heaped powdered sugar
  • 3 tbsp, leveled matcha powder
  • 1 cup of matcha tea

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 50 minutes

For the dough, beat the butter until fluffy. Stir in the vanilla sugar. Separate the eggs. Gradually beat in the egg yolks. Mix the hazelnuts with the baking powder and chocolate shavings and stir in. Beat the egg whites until stiff and fold in. Pour the dough into a springform pan and level the surface. Place the pan on the oven rack and bake at 160°C for about 20 to 30 minutes. Beat the whipped cream, mascarpone, and cream cheese with a mixer. Sprinkle in the matcha and sugar, mix well, and season to taste. Crumble the cooled dough and fill half into 6 glasses. Drizzle a tablespoon of matcha tea over the dough crumbs. Then spread half of the cream over the crumbs. Using the remaining ingredients, fill the glasses with a second layer of crumbs and cream. Sprinkle the tiramisu with a little matcha powder and refrigerate until ready to serve. The amounts of matcha powder and powdered sugar can be adjusted according to taste.
