Ingredients for 4 servings:

  • 8 herring fillets
  • 250 ml wine vinegar
  • 250 ml dry white wine
  • 200 g sugar
  • 2 bay leaves
  • 1 large onion(s), cut into rings
  • 2 bunch dill, finely chopped
  • Spices (pepper, mustard seeds, etc.) to taste

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Total time approx. 1 day 15 minutes

Rinse the herring fillets, pat dry, and cut into fairly small pieces. Combine the vinegar, wine, sugar, bay leaves, spices, and onion rings in a saucepan, bring to a boil, and let cool. Layer the herring and dill in a jar and pour the cold liquid over them. Cover and let stand for at least 24 hours.
