Ingredients for 12 servings:

  • 150 g cranberries, from the jar
  • 800 g quark with horseradish (4 packs of 200 g each)
  • 4 apples, red
  • 8 gherkins
  • 12 fish fillets (matjes fillets)
  • Leaf lettuce, washed
  • cress, washed

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Drain the cranberries thoroughly in a sieve and carefully mix with the horseradish quark. Wash the apples, quarter them, core them, and cut them into small slices. Slice the gherkins as well. Rinse the herring fillets under cold running water, pat them dry with a paper towel, remove the bones if necessary, and cut them into thin strips. Fold the prepared ingredients into the cranberry and horseradish quark. Line twelve cocktail glasses with lettuce leaves, arrange the herring cocktail in them, and garnish with cress leaves.
