Pickled herring

Spread the love

Ingredients for 3 servings:

  • 2 packs of matjes fillet(s) in oil
  • 3 large onions
  • 4 large gherkins
  • 1 package of cream cheese (0.1% fat)
  • 2 cups cucumber juice (approx. 250 ml)

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Wash the fish and cut each fish into about 3 pieces. Slice the cucumbers and onions. Bring the cucumber liquid to a boil, remove from the heat, and let the onion rings steep in it. Let it cool slightly, then stir in the cream cheese. Add the fish and cucumbers and mix everything together. Let it steep for at least 2 hours, or overnight if possible. This goes best with boiled potatoes. The cream cheese means this recipe has fewer calories than using cream or sour cream. Spices aren’t necessary for this recipe, as you use the cucumber liquid, which already contains all the spices.
