Ingredients for 4 servings:
- 200 g fish fillet(s) (matjes fillets)
- 200 g fish fillet(s) (Bismarck herring fillets), skinned
- 125 g quark (low-fat quark)
- 125 g cream (Rama cream for whipping)
- 1 apple, mildly sour
- 100 g gherkins
- 100 g onion(s), red
- herbs, fresh
- pepper
- Salt

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Cut the fish fillets into bite-sized pieces. Dice the gherkin, onion, and apple and add them to the fish pieces. Mix the quark, cream, herbs, and spices together to make a marinade. Fold this into the remaining ingredients and let it marinate. Jacket potatoes make an excellent accompaniment, but hearty bread is also a good accompaniment.
