Matjes in Mustard and Cream Sauce with Jacket Potatoes

Ingredients
 

  • 300 g Potato
  • Salt
  • 1 Onion
  • 1 Apples red
  • 2 tbsp Mustard
  • 1 small Pickled cucumber
  • 1 tbsp Lemon juice
  • 150 g Yogurt
  • 250 g Cream 30% fat
  • 1 tbsp Honey liquid
  • 300 g Herring fillets
  • 0,5 bunch Parsley
  • Salt and pepper

Instructions
 

  • Scrub the potatoes and cook in salted water for about 10-15, drain and allow to evaporate.
  • Halve, core and thinly slice the apple, halve the onion and thinly slice, thinly slice the cucumber. Roughly chop the parsley.
  • Mix the yoghurt, cream, mustard, honey and lemon juice in a bowl, season with salt and pepper. Mix in the matjes fillets, cucumber, apple, onion and parsley. Peel the potatoes and serve with the matjes in a mustard-cream sauce.
