Matjes in tomato and caper sauce

Ingredients for 4 servings:

  • 1 small onion(s)
  • 250 g tomatoes
  • 1 garlic clove(s)
  • 1 pepper, mild
  • 2 tbsp oil
  • 2 tbsp lemon juice
  • 1 tbsp capers
  • 1 pinch of Provençal herbs
  • 200 ml tomato juice
  • 8 herring fillets
  • 50 g olives
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Chop the onion. Dice the tomatoes. Finely chop the garlic. Deseed and chop the peppers. Heat the oil and sauté the onion. Add the tomatoes and peppers, drizzle with lemon juice, and simmer for 5 minutes. Season with salt, herbs, and capers. Add the tomato juice and bring to a boil. Season to taste and serve with the herring fillets and olives.
