Ingredients for 4 servings:

  • 4 herring fillets
  • 1 apple, sour
  • ½ tsp lemon juice
  • 125 ml sweet cream
  • 1 pinch of salt
  • 2 tbsp horseradish from the jar
  • 1 tbsp cranberry compote
  • 2 gherkins
  • 1 tomato(s)
  • Parsley

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with apple and cranberry compote

Peel the apple, core it, and slice it horizontally into 4 slices. Drizzle with lemon juice. Lightly roll the soaked, drained herring fillets and place them on the apple slices. Whisk the cream with salt until stiff and stir in the horseradish. Fill the herring rolls with the cream and top each with a dollop of cranberry compote. Fan-cut the halved cucumbers. Garnish the herring fillets with the cucumber slices, tomato wedges, and parsley. Serve with buttered brown bread and a cold beer.
