Matjes salad on potato pancakes

Ingredients for 2 servings:

  • 3 fish fillets (matjes fillets, approx. 250 g)
  • 1 large red apple
  • ½ bunch chives
  • 2 tbsp lemon juice
  • 4 m.-sized potatoes
  • 1 egg(s)
  • salt and pepper
  • 2 tbsp clarified butter
  • 2 tsp sour cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the herring fillets into small cubes. Wash, core, and dice the apple. Cut the chives into small rings. Drizzle everything with lemon juice and mix gently. Peel and wash the potatoes and grate them on a coarse grater. Then mix with the egg and season with salt and pepper. Heat a tablespoon of clarified butter in a large non-stick pan. Add half of the potatoes to the pan in three portions and flatten with a spoon. Fry the potato pancakes on both sides until crispy and place on a paper towel. Cook three more potato pancakes in the remaining clarified butter. Place three pancakes on each plate and arrange the herring salad on top. Serve with sour cream.
