Asparagus soup

Ingredients for 1 servings:

  • 500 g asparagus, white
  • 1 egg(s), beaten
  • salt and pepper
  • Sugar
  • nutmeg
  • e.g. chives
  • n. B. water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Peel the asparagus, cut it into approximately 2 cm long pieces, and boil it in enough water to make the soup (but don’t use too much). When the asparagus is soft, add the beaten egg and let it set. Remove the soup from the heat and season with salt, pepper, sugar, and nutmeg. Sprinkle with chives and serve. Serve with a slice of buttered bread.
