Ingredients for 6 servings:
- 750 g matjes fillet(s)
- 1 large red onion
- ½ jar pickles
- 2 beetroots, pre-cooked and vacuum-packed
- 2 m.-sized apples
- 500 g yogurt, 3.5% fat
- 1 cup sour cream
- n. B. cucumber juice
- 1 tbsp mustard, medium hot
- 5 juniper berries
- salt and pepper

Cut the herring fillets into approximately 1 cm pieces. Finely dice the onion, slice the gherkins, peel the apples (you can leave the skin on if you like) and dice them as well. Add the beets, diced into approximately 1/2 cm pieces, and mix everything together. Combine the yogurt, sour cream, mustard, finely grated juniper berries, salt, and pepper to make a dressing and drizzle over the salad. Add enough cucumber juice to achieve a pleasant consistency. Let the salad marinate for at least half a day, preferably 24 hours, and then season with salt and pepper. This goes best with boiled potatoes or fried potatoes.
