Matjes salad with mango and cucumber

Ingredients for 2 servings:

  • 4 herring fillets
  • 1 mango(s), ripe, but not too soft
  • ½ cucumber(s), organic
  • ½ onion(s), red
  • ½ chili pepper(s), possibly more, amount according to spiciness and taste
  • 1 lime(s), the juice
  • 2 tbsp orange juice
  • 1 tbsp oil
  • salt and pepper
  • 1 pinch(s) of sugar

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

Rinse the herring fillets, pat dry, and cut into bite-sized pieces. Peel the mango, remove the flesh from the stone, and dice it. Wash the cucumber thoroughly, halve it lengthwise, remove the soft core with a teaspoon, and dice the rest. Finely dice the peeled onion. Finely chop the chili pepper, removing the seeds and white membranes. Mix the lime and orange juice, salt, pepper, and sugar to make a marinade, then whisk in the oil. Add the dressing to the prepared ingredients and mix gently. Cover and let stand for half an hour. Season to taste before serving.
