Matjes "Vienna style"

Ingredients for 4 servings:

  • 8 herring fillets (double fillets)
  • 2 eggs
  • Flour
  • breadcrumbs
  • Clarified butter for frying, or fat of your choice
  • 1 tbsp butter

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

simple but brilliant!

The matjes fillets are breaded like a Wiener schnitzel. Whisk the eggs, coat the fresh matjes fillets first in flour, then in the egg, and finally in breadcrumbs, pressing down firmly. Heat a sufficient amount of clarified butter or vegetable oil (not olive oil!) with a tablespoon of butter and fry the breaded matjes, “floating,” for 2 minutes on each side. Drain on kitchen paper and serve immediately with housewife’s sauce and boiled or fried potatoes. “Against all odds,” we tried this “hot” version of the matjes and were delighted. Aside from the full, savory flavor of the matjes, the combination of the hot matjes with the cold housewife’s sauce adds a special kick to the experience.
