Ingredients for 4 servings:
- 6 fish fillets (matjes fillet)
- 1 apple (Boskop)
- 1 tomato(s)
- 1 can of corn
- 1 small onion(s)
- ½ lemon(s), the juice
- 3 tbsp vinegar (herb vinegar)
- 3 tbsp oil
- salt and pepper
- 1 tsp sugar
Instructions
Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes
Rinse the matjes in water and then chop them into small pieces. Core the apple and tomato, then dice them. Finely chop the onion. Mix everything together, then drizzle with oil, vinegar, and the juice of half a lemon. Season to taste with salt, pepper, and sugar. Be careful with the salt, as the matjes is salty. Refrigerate for 2-3 hours to marinate. Serve with a baguette and tzatziki.
