Matjes with onion curd

Ingredients for 1 servings:

  • 150 g potatoes
  • 2 spring onions
  • 100 g quark
  • salt and pepper
  • 60 g matjes fillet(s)
  • e.g. leaf lettuce

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Boil the potatoes for about 25 minutes. Meanwhile, trim and wash the spring onions and slice them into very fine rings. Stir them into the quark, leaving some of the green parts for garnish. Season with salt and pepper. Serve the herring fillet with the quark on lettuce leaves. Sprinkle with the remaining green parts of the onion. Peel the potatoes and serve.
