Ingredients for 4 servings:
- 8 medium-sized herring fillet(s)
- 200 g cucumber(s)
- 200 g tomatoes
- 200 g radishes
- 200 g Emmental cheese
- 200 g low-fat yogurt
- 1 handful of basil
- 1 bunch of dill
- 1 tbsp, levelled sugar
- 1 tsp, levelled pepper, white
- n. B. Salt
Instructions
Working time approx. 30 minutes; Rest time approx. 30 minutes; Total time approx. 1 hour
a lunch on hot days
Wash the cucumber, tomatoes, and radishes and pat dry with kitchen paper. Remove the skin and seeds from the cucumber, dice finely, and place in a bowl. Chop the tomatoes and radishes into small pieces and add to the cucumber cubes. Chop the cheese, but keep them separately. Wash the leaves, shake dry, remove the stems, chop, and place in the salad bowl. Mix the sugar and pepper together with the chopped leaves and place in the salad bowl. Mix with the ingredients. Season the mixture generously with salt and let stand for about 30 minutes. Before arranging the salad with the not-too-cold herring fillets, discard any water that has formed in the bowl. Stir in the cheese sticks and yogurt and season again with salt if necessary.
