Matjestartar on Cucumber Salad

The perfect matjestartar on cucumber salad recipe with a picture and simple step-by-step instructions.

  • 1 Pc. Cucumber
  • 1 Pc. Shallot
  • 200 ml Chicken chilli sauce
  • 1 tsp Mustard medium hot
  • 0,5 tsp Curry
  • 50 ml Vinegar
  • 50 ml Oil
  • 10 g Chopped dill
  • Salt pepper
  • 4 Pc. Herring fillet
  • 1 Pc. Apple
  • 1 Pc. Shallot
  • 3 tbsp Olive oil
  • 1 pinch Pepper from the grinder
  1. Cucumber salad: peel the cucumber, cut in half and core with a spoon. Cut lengthways into strips, then dice and place in a bowl. Let the salts rest. Pour off the water that forms. In the meantime, dice the shallots (but you can also use spring onions) and sauté them in a pan. Let cool down. Chop the dill and mix the dill, chilli sauce, curry, vinegar, oil, mustard and shallots vigorously in a bowl and marry with the cucumber. Season to taste with salt and pepper. Let it steep in the refrigerator for 2 hours.
  2. Matjestartar: Peel, core and dice the apple. Cut the shallot into fine cubes. Cut the herring into small pieces. Now mix the apple, shallot and matjes and finely chop everything with a chef’s knife. Put in a bowl and season with olive oil and pepper. Put something into the fridge.
  3. After the resting time, arrange the cucumber salad on a plate. Cut off the herring with an ice cream scoop or spoon balls / dumplings and serve on the cucumber salad. Goes through as a starter. Well, good luck!
