Maultaschen – Salad

Ingredients for 4 servings:

  • 2 packs of Maultasche(s)
  • 400 g cherry tomatoes
  • 1 red bell pepper(s)
  • 1 bell pepper(s), yellow
  • 1 bell pepper(s), green
  • 1 bunch of spring onions
  • salt and pepper
  • 5 tbsp oil (not olive oil)
  • 2 tbsp vinegar (if possible, Melfor vinegar)
  • Broth as needed

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Let the Maultaschen simmer in the broth according to the instructions. Then cut each Maultaschen into approximately 6 strips. Quarter the cherry tomatoes, dice the bell peppers, and also slice the spring onions into small rings. Combine everything in a bowl, season with pepper and salt, and then toss with oil and vinegar. Let the mixture simmer for at least 2-3 hours.
