Ingredients for 4 servings:

  • 1 bunch of soup vegetables (celery, carrots, leeks)
  • 1 bell pepper(s), yellow
  • 1 broccoli
  • 2 tomatoes
  • 1 liter of broth
  • 1 cm ginger
  • salt and pepper
  • rapeseed oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Gourmet stew with few calories

Finely chop the celery and the other ingredients into walnut-sized pieces. Add a little rapeseed oil to the pot and sauté the celery and ginger. After 7 minutes, add the carrots and sauté. Season with salt and pepper, then add the stock. Gradually add the bell peppers, leeks, broccoli, and tomatoes. Let everything cook for 5 minutes and then season to taste. This goes wonderfully with World Champion bread with butter and cheese.
