Ingredients for 1 servings:

  • 250 g walnuts, chopped
  • 250 ml rum
  • 125 ml vodka
  • 1 vanilla pod(s)
  • 300 ml water
  • 125 g brown rock sugar
  • 6 tbsp maple syrup

Instructions

Working time approx. 30 minutes; Rest period approx. 28 days; Cooking/baking time approx. 15 minutes; Total time approx. 28 days 45 minutes

with rum and vodka

Roast the chopped walnuts in a non-stick pan over medium heat, turning occasionally, until golden brown. Then transfer to a plate and let cool. Transfer to a sealable container, pour over the rum and vodka, and let steep in a cool, dark place for about 4 weeks. Cut a slit in the vanilla pod lengthwise and scrape out the seeds. Return the vanilla pod to the glass tube and seal. In a saucepan, heat the vanilla seeds with the water, rock candy, and maple syrup, stirring until dissolved. Then let the sugar solution cool. Strain the nut mixture into a container through a sieve lined with a cloth or a coffee filter. Mix the mixture with the cooled sugar solution. Remove the vanilla pod from the glass tube and pour in the walnut liqueur. The walnut liqueur is a great Christmas gift, goes well with vanilla ice cream, and lasts for about 6 months.
