Mealworm quinoa patties with coriander

Ingredients for 4 servings:

  • 100g quinoa
  • 50 g mealworms, dried
  • 1 carrot(s)
  • 1 small onion(s)
  • 2 eggs
  • 2 tsp corn flour
  • Parsley
  • ½ lemon(s), zest, organic
  • 2 tsp paprika powder
  • 1 tsp coriander seeds
  • oil
  • salt and pepper

Working time approx. 35 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 45 minutes

Bring the quinoa to a boil with twice the amount of water and simmer over low heat with salt, pepper, and coriander seeds for about 20 minutes. Remove from the heat and let it swell for another 5 minutes. Crush the mealworms in a bowl until they reach the desired size. Dice the carrot and onion and sauté in a little oil. Finely chop the parsley and add it. Now mix the vegetables with the zest of half an organic lemon, cooked quinoa, mealworms, eggs, cornflour, and paprika in a large bowl. Season with salt and pepper. Form the mixture into palm-sized patties and fry with a little oil over medium heat until golden brown on both sides.
