Meat sausage salad with pearl onions and homemade mayonnaise

Ingredients for 4 servings:

  • 1 egg(s)
  • 1 egg yolk
  • 1 tsp, heaped mustard
  • 1 tsp lemon juice
  • Salt
  • pepper
  • Oil, tasteless (e.g. safflower oil or corn germ oil)
  • 450 g meat sausage
  • 250 g gherkins
  • 200 g pickled onions (silver onions)

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Crack one egg and place it completely into a tall container (with measuring marks). Separate the second egg and add only the yolk to the container. Add the mustard and lemon juice and a little salt and pepper. It’s better to use less salt and season again later. Pour in oil until you reach 300 ml at the measuring mark on the container. Place the hand blender in the container and switch it on. Wait a moment until some mayonnaise forms and then slowly pull it up. Remove the hand blender, taste the mayonnaise and add a little more salt, pepper, lemon juice or mustard if necessary and briefly blend again with the hand blender. Cut the pork sausage into thin slices and cut the slices into fine strips and place in a bowl. Cut the gherkins into fine strips and add to the bowl with the pork sausage. Also add the pearl onions to the bowl. Add the mayonnaise to the remaining ingredients and mix everything well. Season to taste with a little salt and pepper if necessary. Then let the pork sausage salad marinate for a few hours.
