the meatballs

  • 1000 g Mixed minced meat (freshly minced)
  • 2 piece Butcher onions
  • 2 tablespoon Freshly ground pepper and salt
  • 1 tablespoon Paprika powder (smoked)
  • 2 tablespoon Mustard medium hot
  • 2 tablespoon Ketchup
  • 2 piece Eggs
  • 5 tablespoon Breadcrumbs
  • 1 piece Alternatively soaked bun
  • 1 teaspoon Worchester sauce (if you like it)

the cucumber salad

  • 2 piece Snake cucumber
  • 2 piece Onion
  • 2 piece Pepper and salt
  • 2 piece Sunflower oil
  • 2 piece Balsamic white
  • 1 piece Lemon fresh
  • 1 cups Yogurt 10% fat
  • 1 Tablespoon (level) Mild mustard
  • 1 Tablespoon (level) Sugar or honey
  • 1 Tablespoon (level) Fresh chives (seasonal)

Satiety side dish

  • 500 g Boiled potato (freshly peeled and cooked)

  • Oil; Butter or vegetable fat for frying the meatballs

  1. If you have your own meat grinder, you start with grinding the meat first. If you don’t have it, you can buy the minced meat from a butcher you trust. For meatballs, I recommend a balanced mix of beef and pork so that the meatballs are juicy and fluffy.
  2. Then first put the peeled and diced onion in a large bowl. Now add the spices and eggs. Mix it vigorously with both hands and apply light pressure as well. Now add either breadcrumbs or the soaked roll. Put the mustard and ketchup on top and mix well again with your hands and light pressure.
  3. Now let the mass stand a little. During this time it is advisable to peel the potatoes and cook them with salted water. The salad can now also be prepared.

  1. Rinse the snake cucumbers under running water and dry them. I only use the peel if it is flawless – otherwise the cucumbers are peeled with the peeler beforehand. In a large bowl, cut into thin slices with a slicer. Then the diced onion and lemon juice are added. Add spices. Mix well and put in the fridge to pull through.
  2. Now form small or large (depending on your taste) meatballs from the pulled minced meat. In a sufficiently large pan, the fat of your choice (I mix butter and oil) is heated up and the meatballs are seared all around. Reduce the heat a little and fry for 10 minutes. Do not turn the meatballs too often so that they get a nice and crispy crust.
  3. If everything is well cooked, the plates are arranged or everything is served in bowls.
