Meatballs in peanut sauce

Ingredients for 4 servings:

  • 500 g minced meat (pork, beef or poultry)
  • 2 spring onions, finely chopped
  • 1 egg(s)
  • 100 g chips (peanut crisps)
  • 1 chili pepper(s), finely chopped, or chili flakes
  • 2 tbsp soy sauce
  • 1 tsp five-spice powder
  • salt and pepper
  • some oil for the pan
  • 140 g peanut butter
  • 1 tbsp honey
  • 1 chili pepper(s), finely chopped, or chili flakes
  • 1 clove(s) garlic, finely chopped
  • 300 ml chicken stock
  • Curry powder, to taste
  • Salt

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour

Crumble the peanut crisps in a bowl with your fingers. Add all the ingredients for the meatballs and mix well. Season with salt and pepper. Form the mixture into small balls and fry them in a pan with a little oil. Combine the ingredients for the sauce in a pot and bring to a boil. Add the fried meatballs, cover, and simmer over low heat for about 15 minutes. Replacing the chicken broth with coconut milk also makes a delicious variation. Serve with noodles (stir-fried noodles), rice, or baguette. I like to fry chopped red bell peppers with the meatballs and add them at the end.
