Meatballs with a twist

Ingredients for 8 servings:

  • 500 g minced meat, mixed beef and pork
  • 150 g rice (e.g. Basmati)
  • 2 onions
  • 2 eggs
  • salt and pepper
  • Oil, for frying
  • 500 ml tomato juice (or a little more)
  • Breadcrumbs

Working time approx. 30 minutes; Total time approx. 30 minutes

according to my mom’s recipe

Pour twice the amount (about 300 ml) of cold water over the rice, add a little salt, bring to a boil, and simmer in a covered pan over low heat until the water is completely absorbed. Then let it cool. Finely chop the onion. Mix the onion, eggs, ground meat, and rice until smooth, then season with salt and pepper. Heat the oil in a pan. Form oval meatballs, roll them in breadcrumbs, and fry in the oil. Place them in a deep baking dish and pour in tomato juice until the meatballs are just covered. Cover the baking dish tightly (with a lid or aluminum foil) and braise the meatballs at 200 degrees Celsius for another 30 minutes. The meatballs can also be eaten on their own. A mixed salad goes well with them.
