Meatballs without onions

Ingredients for 4 servings:

  • 500 g minced beef, preferably from beef fillet
  • 2 rolls (Weckle)
  • 2 small gherkins
  • ½ carrot(s)
  • 1 egg(s), possibly one more
  • 150 g curd cheese, 20%
  • some milk
  • 1 bunch of parsley
  • salt and pepper
  • mint
  • Olive oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

gentle meatballs

Cut 2 bread rolls into large pieces and brush with milk. Cut 2 gherkins and 1 half a carrot into tiny cubes (1-2 mm³). Mix the ground beef, preferably from the sirloin, with the bread roll, carrot, gherkins, parsley, quark, and 1-2 eggs. Season the mixture to your taste, for example, with fleur de sel and pepper-mint spice mix. Form the mixture into meatballs and fry in a pan with the best olive oil for 10-12 minutes.
