Mediterranean arugula salad

Ingredients for 4 servings:

  • 1 bowl of arugula
  • 1 pack of mozzarella, mini balls
  • 3 slices of ham, Serrano (alternatively Parma ham)
  • 2 tomatoes
  • 1 large onion(s)
  • Salt
  • olive oil
  • Balsamic vinegar, white
  • 2 tbsp Parmesan, grated
  • black pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the arugula, drain, and place it in a large bowl. Quarter the mini mozzarella balls. Carefully tear the ham into small pieces and add both to the bowl with the arugula. Dice the tomatoes, removing the seeds. Dice the onion or slice it into thin rings. Add both ingredients to the bowl. Season to taste with olive oil, balsamic vinegar, salt, and pepper. Finally, add the Parmesan cheese and mix well. Tip: To make the salad easier to eat, you can also cut the arugula in half or two to create smaller pieces.
