Ingredients for 2 servings:
- 2 bell peppers, yellow
- 2 bell peppers, red
- 1 onion(s)
- 1 can date tomato(s) (Datterini)
- 1 bunch parsley, chopped
- 1 tsp, heaped herbs, Mediterranean
- 1 clove(s) garlic
- 1 shot balsamic vinegar, aged
- 3 tbsp oil for frying
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
Halve the bell peppers, trim, wash, and slice into 2 x 2 cm pieces. Peel and dice the onions. Sauté the onions in 3 tablespoons of hot oil, add the bell peppers and tomatoes, season with salt and pepper. Simmer for 20 minutes. Finally, stir in the chopped parsley and herbs.
