Mediterranean Bread – Type of Flatbread

The perfect mediterranean bread – type of flatbread recipe with a picture and simple step-by-step instructions.

  • 500 g Wheat flour type 550
  • 5 tablespoon Extra virgin olive oil
  • 2 teaspoon Salt
  • 2 teaspoon Oregano
  • 1 pinch Dried rosemary
  • 1 tablespoon Natural yoghurt
  • 300 Milliliters Lukewarm water
  • 1 packet Yeast fresh
  • 1 tablespoon Honey
  • 10 piece Black olives, pitted, greens if you like,
  • 4 piece Dried tomatoes in oil and oregano
  • 3 tablespoon Freshly grated Parmesan
  1. Dissolve yeast and honey in lukewarm water and cover and leave to rest for 5 minutes.
  2. In the meantime, put the flour, salt, olive oil and herbs in a bowl. Cut the olives into slices and the tomatoes into pieces, reserve a little of both to cover the dough before baking.
  3. Add the yeast mixture to the flour and knead everything very well, add olives, tomatoes and yoghurt and knead with a food processor for at least 15 minutes. (A little longer by hand) It is a very soft, hardly sticky dough.
  4. Line a baking sheet with parchment paper. Wet your hands with a little olive oil and take the dough out of the bowl and place on the baking sheet, the dough should be completely moistened with the oil once through your hands. Carefully shape into the desired shape. The surface should be slightly moistened, cover with the olive oil, then with the reserved pieces of tomato and olive slices and sprinkle with Parmesan.
  5. Place an ovenproof bowl with water in the bottom of the oven. Put the baking sheet into the * NOT * preheated oven, turn on the hot air to 210 ° C, reduce it to about 20 minutes, then reduce to 180 ° C and bake for another 10 minutes. When it has the desired tan, remove it and place it on a wire rack to cool down a little. If you want a shiny surface, you can spray the bread with a little water while it is still hot .;)
  6. This yeast dough rises in the oven when the oven is heated up. 😉 So it is done quickly and within an hour already lukewarm, ready to be tasted! A hit with every barbecue … goes well with it, e.g. creamy herb butter, or tzatziki – tzatziki – tzatziki, but also a pleasure pure due to the spice 😉
