Mediterranean chicken legs à la Silvia

Ingredients for 5 servings:

  • 10 chicken legs, with breast
  • 6 cocktail tomatoes
  • 4 sprigs rosemary
  • 6 garlic cloves
  • 4 sprigs of oregano
  • 1 sprig of thyme
  • Lemon balm
  • Salt
  • pepper
  • curry powder
  • Paprika powder
  • olive oil
  • 1 orange(s)
  • 1 lemon(s)
  • Spice mix (African spice) for poultry, if available
  • possibly chili powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Line a baking sheet with aluminum foil. Wash the chicken thighs and pat them dry. Season them with salt, pepper, curry powder, and paprika, and chili powder if desired. Place the thighs on the baking sheet. Arrange the tomatoes around the thighs and then scatter the lightly crushed garlic cloves on the baking sheet. Now scatter the rosemary, thyme, lemon balm, and oregano on the baking sheet. If using, sprinkle the thighs with the African spice. Slice the lemon and orange and place a slice on each side of the thighs. Squeeze the remaining lemon and orange juice and drizzle the juice over the thighs. Pour olive oil over everything and roast in a preheated oven at 200°C for about 45 minutes.
