for the fillet slices
- 6 Shove Pork fillet about 2cm thick
- 12 Sage leaves
- 6 Discs Eggplant fresh
- 6 Discs Zucchini fresh
- 6 Discs Black Forest bacon air-dried
- 1 Clove of garlic
- Olive oil, salt, pepper
salad
- Pickled lettuce, bell pepper, cucumber, tomato, spring onion
- Chives fresh
- Vinaigrette
- Ciabatta
- Peel the garlic and cut into very fine slices. Wash the sage leaves. Season the fillet slices with salt and pepper, place a slice of garlic and a sage leaf on top. Now cover with a slice of eggplant. Turn over and do the same with the other side, but cover with a zucchini slice. Wrap everything in a slice of bacon and secure with a toothpick.
- Mix the ingredients for the salad (amount as required), fold in the vinaigrette and sprinkle with the chives.
- Drizzle the fillet slices with oil and cook on the charcoal or electric grill for about 15 minutes. (I had a grill pan – it’s cheaper for small quantities) There was also ciabatta and of course a cool blond one, but a dry red wine goes very well with it, because the southerners don’t have such a good beer 😉
