for the fillet slices

  • 6 Shove Pork fillet about 2cm thick
  • 12 Sage leaves
  • 6 Discs Eggplant fresh
  • 6 Discs Zucchini fresh
  • 6 Discs Black Forest bacon air-dried
  • 1 Clove of garlic
  • Olive oil, salt, pepper

salad

  • Pickled lettuce, bell pepper, cucumber, tomato, spring onion
  • Chives fresh
  • Vinaigrette
  • Ciabatta
  1. Peel the garlic and cut into very fine slices. Wash the sage leaves. Season the fillet slices with salt and pepper, place a slice of garlic and a sage leaf on top. Now cover with a slice of eggplant. Turn over and do the same with the other side, but cover with a zucchini slice. Wrap everything in a slice of bacon and secure with a toothpick.
  2. Mix the ingredients for the salad (amount as required), fold in the vinaigrette and sprinkle with the chives.
  3. Drizzle the fillet slices with oil and cook on the charcoal or electric grill for about 15 minutes. (I had a grill pan – it’s cheaper for small quantities) There was also ciabatta and of course a cool blond one, but a dry red wine goes very well with it, because the southerners don’t have such a good beer 😉
