Ingredients for 4 servings:
- 500 g fish fillet(s), e.g. E.g. redfish or similar.
- 4 tomatoes, ripe
- 10 olives, green or black
- 1 organic lemon(s)
- 30 g Parmesan, sliced
- 2 tbsp breadcrumbs
- ½ chili pepper(s), medium hot
- 6 stalks of basil
- 2 tbsp olive oil
- salt and pepper
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes
Preheat oven to 200°C (top/bottom heat). Brush a baking dish with 1 tablespoon of olive oil. Pat the fish fillets dry and place in the dish. Wash the lemon in hot water and zest. Squeeze the lemon and drizzle the juice over the fish. Slice the olives and tomatoes. Deseed the chili pepper, cut into very thin slices, and mix with the olives and tomatoes. Season with salt and pepper and drizzle over the fish. Finely grate the Parmesan cheese and add 3/4 of it to the lemon zest. Add the breadcrumbs, the remaining olive oil, and mix everything together. Sprinkle over the fish. Sprinkle with the remaining Parmesan cheese. Place in the hot oven for 15 minutes. Sprinkle with torn basil before serving. Serve with ciabatta and a tomato salad.
