Mediterranean ground beef and vegetable casserole

Ingredients for 4 servings:

  • 500 g minced beef
  • 2 m.-sized onion(s)
  • 4 medium-sized peppers
  • 2 m.-large zucchini
  • 250 g mushrooms, fresh
  • 1 can of tomatoes, chopped or pureed
  • 1 pack of Gouda
  • ½ chili pepper(s)
  • pepper
  • Salt
  • Paprika powder, sweet
  • Vegeta
  • Oregano, dried
  • Basil, dried
  • Rosemary, fresh
  • Garlic clove(s)
  • cumin
  • some sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Preheat the oven to 180°C and prepare a large baking dish. Finely dice the onions and mix with the ground beef, season well with salt, pepper, paprika, cumin, and rosemary. Finely slice the peppers and zucchini. Quarter the zucchini and then cut into bite-sized slices. Clean and slice the mushrooms, finely chop the chili pepper (or use a little chili powder), and thinly slice the garlic clove. Place the can of chopped tomatoes and the sauce in a bowl and season with dried oregano, basil, salt, pepper, and Vegeta seasoning if desired, along with a little sugar. Now add the peppers, zucchini, and garlic to the baking dish, spread the ground beef over the top, pour over the tomato sauce, and finally place the mushrooms on top and place in the oven. After 40-50 minutes, sprinkle with grated cheese and continue baking until the cheese is golden brown.
