Mediterranean-inspired carrot vegetables

Ingredients for 4 servings:

  • 500 g carrot(s)
  • 1 onion(s)
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 140 g tomato paste
  • 200 ml cream
  • salt and pepper
  • Sugar
  • 2 tbsp Italian fresh herbs
  • 300 ml water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Peel or wash the carrots. Peel and dice the onions. Press or finely chop the garlic. Sauté the onion in the oil. Then add the carrots and pour in the water. Simmer the carrots until they are still firm to the bite. Strain and reserve the stock. In a saucepan, stir the cream and tomato paste until smooth. Add the garlic, bring to a boil briefly, and add the carrot pieces and herbs. If desired, add a little of the cooking water to make it nice and creamy. Season to taste with salt, pepper, and sugar. Serve warm with fish, meat, or vegetarian dishes.
