Mediterranean marinated tofu on tomato vegetables

Ingredients for 2 servings:

  • 200 g tofu, natural
  • 5 tbsp olive oil
  • 2 tbsp lemon juice
  • some oregano, fresh or dried
  • some basil, fresh or dried
  • some rosemary, fresh or dried
  • some cayenne pepper, ground
  • some salt
  • 1 can of tomatoes, chopped
  • 1 bay leaf, dried
  • 2 portions of vegetables, e.g. carrots, zucchini or peppers in thin slices
  • 1 large onion(s)
  • 1 Pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 30 minutes

vegan, simple and tasty

First, place the tofu, cut into 1x1x1 cm cubes, into a soup bowl. Marinate it with olive oil, lemon juice, oregano, basil, rosemary, and cayenne pepper. Let the mixture sit for about an hour. In the meantime, thinly slice the vegetables and dice the onion and peppers. Heat the tomatoes in a saucepan. Then add the bay leaf and all the vegetables and cook for 15 minutes, stirring regularly. Finally, season with oregano, basil, rosemary, cayenne pepper, and salt. Fry the tofu in the marinade in a pan for a few minutes until golden brown, then add salt. The dish is ready to serve.
