Mediterranean mashed potatoes

Ingredients for 2 servings:

  • 700 g potatoes
  • 50 g Pecorino, alternatively Parmesan
  • 3 tbsp herbs, chopped (rosemary and thyme)
  • 5 tbsp olive oil
  • e.g. salt and pepper
  • e.g. milk, depending on the desired consistency

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Italian-style mash

Peel the potatoes, cut them into 2 x 2 cm cubes, and boil them for 15-16 minutes. Meanwhile, chop the herbs. Drain the potatoes and mash them with a masher. Stir in the pecorino, herbs, and olive oil, and season with salt and pepper to taste. Depending on the potato variety and your personal preference, add milk in small batches until the desired consistency is reached. This mash is perfect with Milanese-style schnitzels (with Parmesan or pecorino in the breading).
