Mediterranean meatloaf

Ingredients for 4 servings:

  • 750 g minced beef
  • 4 cloves garlic
  • 2 eggs
  • some salt and pepper
  • 1 tbsp paprika powder, mild or hot
  • 1 red bell pepper(s)
  • 2 tbsp sweet mustard
  • 1 can of chopped tomatoes or fresh tomatoes
  • some olive oil
  • 150 g Parmesan, diced

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Polpettone

Chop the garlic, dice the bell peppers, and beat the eggs. Brush a small loaf pan with olive oil and preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Blend all ingredients, except the tomatoes, into a dough. Then place the loaf in the loaf pan and place it in the oven. After 30 minutes, add the tomatoes to the meatloaf and let it cook for another 20-30 minutes. The tomatoes should stick to the top and not turn black. Slice the loaf in the pan and serve with fresh leaf salad or baguette. Serve with red wine.
