Ingredients for 1 servings:

  • 1 kg Flour Type 00
  • 1 pinch of salt
  • 0.33 cubes of yeast
  • 270 ml water, lukewarm
  • 1 can of tomatoes, peeled
  • 500 g minced meat, mixed
  • 4 shallots
  • 250 g Parmesan
  • 100 ml olive oil
  • salt and pepper
  • oregano
  • Garlic
  • 150 ml red wine

Working time approx. 1 hour; Rest time approx. 3 hours 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 4 hours 55 minutes

For the dough, mix flour, a pinch of salt, 1/3 cube of yeast, and lukewarm water to form a dough. Cover the dough and let it rise in a bowl for two to three hours. Then form four balls and let them rise again for half an hour. For the topping, fry the shallots and minced meat in a pan. In the meantime, chop the peeled tomatoes in a blender and season with the spices. Deglaze the minced meat with the red wine and peeled tomatoes. Let the minced meat mixture cool. Roll out the dough balls evenly and spread the cold minced meat and tomato mixture over the dough. Spread the Parmesan cheese evenly and bake at 200 degrees Celsius for about 25 minutes.
