Ingredients for 8 servings:

  • 3 eggs
  • 2 dl milk
  • 1 pinch of sea salt
  • 1 tsp sugar
  • ½ tsp baking powder
  • 250 g spelt flour or whole wheat flour
  • 1 small onion(s), finely chopped
  • 50 g olives, black
  • 1 tbsp basil, finely chopped
  • ¼ cup Parmesan cheese, grated
  • 4 tbsp olive oil

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Recipe for 8 pieces

Whisk together eggs, milk, olive oil, salt, and sugar. Add baking powder and flour and knead to form a smooth batter. Combine the remaining ingredients with the batter. Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit). Grease small soufflé dishes or muffin tins with butter. Pour in the batter and sprinkle with a little Parmesan cheese. Bake the muffins in the preheated oven at 200 degrees Celsius (400 degrees Fahrenheit) on the middle rack for about 20 minutes. Tip: Serve the warm muffins with pickled olives, artichokes, and tomatoes.
