Ingredients for 4 servings:
- 250 g pasta
- 1 eggplant(s)
- 1 onion(s)
- 1 bell pepper(s), red
- 1 bell pepper(s), yellow
- 3 large carrots
- 1 pack of sheep’s cheese
- olive oil
- salt and pepper
- herbs, Mediterranean
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Cook the pasta. In the meantime, dice the vegetables. Dice the feta cheese as well. First, heat olive oil in a pan. Fry the eggplant cubes for about 5 minutes. Add the onion cubes and fry until translucent. Then add the carrot cubes for another 5 minutes. Finally, fry the bell pepper cubes for about 3 minutes. Season everything with salt, pepper, and the Mediterranean herbs. Drain the pasta and add it. Mix everything well, season again to taste, and fry for another 1-2 minutes. Finally, stir in the finely diced feta cheese. Reduce the heat or turn it off completely. Let the feta cheese melt. Serve with warm ciabatta, if desired.
