Mediterranean pasta salad with arugula and Parma ham

Ingredients for 4 servings:

  • 250 g pasta, bows
  • 200g mozzarella
  • 150 g tomatoes, dried, pickled in oil
  • 150 g arugula
  • 150 g Parma ham, optionally Serrano ham
  • 50 g pine nuts
  • 1 large garlic clove(s)
  • 70 ml olive oil
  • 3 tbsp balsamic vinegar
  • 1 tsp pesto
  • 1 tsp mustard, medium hot
  • some Parmesan
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the pasta according to the package instructions until al dente, let cool, and transfer to a bowl. Dice the mozzarella and chop the sun-dried tomatoes. Wash the arugula, trim the stalks, and chop the arugula as desired. Cut the Parma ham into strips. Add everything to the pasta. Briefly toast the pine nuts in a pan without oil; be careful, they should only be lightly browned! Then add the pine nuts to the bowl. Press the garlic clove into a small bowl. Add the olive oil, balsamic vinegar, pesto, mustard, and freshly grated Parmesan cheese. Mix everything well and season with salt and pepper. Stir the dressing into the salad and toss everything well. Season to taste before serving.
