Mediterranean potato wedges

Ingredients for 2 servings:

  • 500 g potatoes
  • some basil
  • 4 small tomatoes (Roma or date tomatoes)
  • 1 large chili pepper(s), red
  • Salt
  • pepper
  • 2 tbsp olive oil
  • 3 tbsp cream
  • some Parmesan, freshly grated
  • possibly sea salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

good with grilled food or as a side dish

Wash the potatoes and cut them into wedges with the skin on. Deseed and finely chop the chili pepper, and also finely chop the basil. Quarter the tomatoes. Place everything on a baking tray, drizzle with olive oil, season with salt and pepper, and mix well. Bake in the oven at 160°C (fan oven) for about 20 minutes (since my oven bakes very quickly, you may need to increase the temperature a bit). About 5 minutes before the end, drizzle with cream, sprinkle with the Parmesan cheese, stir, and then finish cooking. If you like, sprinkle with a little more sea salt before serving. Tastes great with grilled food or as a side dish.
