Mediterranean red cabbage

Ingredients for 2 servings:

  • ½ small red cabbage, approx. 500 g
  • 2 onions
  • 2 cloves garlic
  • 7 tbsp olive oil
  • e.g. salt and pepper
  • 200 ml vegetable stock
  • e.g. Fleur de Sel, alternatively simple sea salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Vegan version, braised in olive oil

Halve the red cabbage, remove the stalk, and then cut into rectangular pieces. Peel and finely dice the onions and garlic. Sauté the onions and garlic in 1 tablespoon of olive oil over medium heat until the onions are translucent. Add the red cabbage and fry for 5 minutes, stirring occasionally. Season generously with salt and pepper. Deglaze with the vegetable stock, add the remaining olive oil, and cover the pot. Cover and simmer the vegetables for 15 to 20 minutes, until the red cabbage is tender and the liquid has almost evaporated. Before serving, season with a few drops of fresh olive oil and a few crumbs of fleur de sel.
