Ingredients for 6 servings:
- 200 g barley, pre-cooked (ready-made product), mini
- 2 shallots
- 4 tbsp olive oil
- 1 m.-large zucchini
- 150 g feta cheese
- 10 cocktail tomatoes
- 2 tbsp herb vinegar
- Herbs, fresh or alternatively frozen
- salt and pepper

Cook the barley in salted water for about 15 minutes. Dice the feta cheese. Dice the shallots and sauté them in a pan with 2 tablespoons of olive oil. Then dice the zucchini and sauté them. Let the mixture cool. Mix the remaining olive oil, herb vinegar, salt, pepper, and herbs to make a vinaigrette. Mix with the cooked barley, feta cheese, and zucchini. Quarter the tomatoes and add them before serving. 316 kcal per serving
