Ingredients for 2 servings:
- 500 g pork fillet(s)
- 100 g feta cheese
- 100 g red pesto
- 100 g cream cheese, herbs
- 1 tbsp Provençal mustard
- 1 tsp thyme, fresh or shredded
- 1 tsp herbs de Provence
- ½ tsp balsamic vinegar, light
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cut the fillet in half and cut a deep pocket lengthwise into each piece. Mix all ingredients well (grating the feta cheese while doing so) and place them into the two pockets. Fold the pockets together and place them on a baking sheet in a preheated oven at 200°C for about 30 minutes on a medium heat. I serve the pork fillet with bacon-wrapped beans, mushrooms, and rosemary potatoes.
