Ingredients for 2 servings:

  • 1 small pork fillet(s), whole
  • 6 slice(s) bacon or raw ham
  • 100 g cream cheese
  • 50g mozzarella
  • 3 tomatoes, dried
  • 1 tbsp paprika paste

I actually wanted to make Nearlyheadlessnick’s stuffed pork tenderloin, but since I didn’t have any spinach at home, I changed my plans: Beat the cream cheese until smooth, stir in the chopped sun-dried tomatoes, add the paprika paste, and mix in the chopped mozzarella. Cut a slit in the pork tenderloin lengthwise down the middle – but don’t cut all the way through. Spread the filling on top and close the pork tenderloin. If the ham or bacon slices aren’t large enough to wrap the tenderloin completely, take two slices and secure them with toothpicks. Place the finished “package” in a baking dish and roast in the oven at 160°C for about 25 minutes. If you like sauce, remove the pork tenderloin and keep it warm, pour some cream into the baking dish, and return the dish to the oven for another 5 minutes. Served with a juicy risotto or potato gratin, however, you don’t need any sauce.
