Ingredients for 4 servings:
- 2 chicken breasts
- 1 head of lettuce (to taste: Lollo Blanco, Iceberg, etc.)
- 2 avocados
- 2 tbsp lemon juice
- 1 handful of black olives, pitted
- Salt
- some olive oil
- ½ pack of feta cheese or shepherd’s cheese
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cut the chicken breast into strips, fry briefly in a pan with a little oil, let cool, and cut into pieces. Halve, pit, peel, and dice the avocado. To keep it nice and green, drizzle with lemon juice. Wash the lettuce leaves with cold water, dry them with a kitchen towel, and refrigerate for 1 hour to keep them crisp. Finely dice the feta. In a salad bowl, tear the lettuce leaves into pieces, add the chicken breast, avocado, feta, and olives, season with salt, drizzle with olive oil, mix gently, and serve.
