Ingredients for 4 servings:
- ½ small head of red cabbage
- 4 stalks of spring onion(s)
- 120 g sheep’s cheese, pickled in brine
- Olive oil, plenty
- ½ lemon(s), juice
- Sea salt and pepper, freshly ground black
- Oregano, ground

as a salad side dish
Shred the red cabbage into medium-thin strips. Cut the feta cheese into small cubes. Lightly salt the shredded red cabbage, add oil, and let it simmer for a while. Stir in the cheese and finely sliced spring onions. Season with lemon juice and seasonings and let the salad marinate in the refrigerator for 30 minutes. Season again before serving.
