Ingredients for 4 servings:
- 4 tomatoes, from the vine
- 1 cucumber(s)
- 1 bunch of spring onions (shallots)
- 200 g feta cheese
- Herbs such as parsley, lovage, oregano
- 6 tbsp olive oil
- 3 tbsp balsamic vinegar
- salt and pepper

Wonderfully fresh salad with grilled, pan-fried or fish
Wash and trim the tomatoes and cucumber. Quarter the tomatoes and cut into bite-sized pieces. Quarter the cucumber lengthwise and cut into bite-sized pieces. Slice the spring onion into thin rings. Chop the herbs. Dice the feta. Combine all ingredients in a large bowl. Add the oil and balsamic vinegar, season with salt and pepper, and mix well. Let the salad marinate in the refrigerator for about an hour.
