Mediterranean tomato and cucumber salad with feta

Ingredients for 4 servings:

  • 4 tomatoes, from the vine
  • 1 cucumber(s)
  • 1 bunch of spring onions (shallots)
  • 200 g feta cheese
  • Herbs such as parsley, lovage, oregano
  • 6 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Wonderfully fresh salad with grilled, pan-fried or fish

Wash and trim the tomatoes and cucumber. Quarter the tomatoes and cut into bite-sized pieces. Quarter the cucumber lengthwise and cut into bite-sized pieces. Slice the spring onion into thin rings. Chop the herbs. Dice the feta. Combine all ingredients in a large bowl. Add the oil and balsamic vinegar, season with salt and pepper, and mix well. Let the salad marinate in the refrigerator for about an hour.
