Mediterranean tomato bread

Ingredients for 1 servings:

  • 1 cube of yeast
  • 220 ml water, lukewarm
  • 3 tbsp olive oil
  • 3 tbsp spice mix (tomato spice, dried)
  • 3 tbsp water
  • 1 tsp sugar
  • 100 g wheat flour
  • 300 g spelt flour

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 2 hours 35 minutes

Mix the tomato seasoning with the 3 tablespoons of water and let it soak for 10 minutes. Mix the yeast with 220 ml of lukewarm water and dissolve it. Combine the flours with the sugar and olive oil, along with the yeast water and seasoning. Knead everything into a dough and let it rest for 1 hour. Shape the dough into a loaf, place it on a baking sheet, and let it rest, covered, for another 1/2 hour. Place a small bowl of water in the oven, score the bread with a knife, and bake at 160°C (top/bottom heat) for about 45 minutes.
